Combine olive oil through cayenne ingredients in a large bowl, add chicken and toss to coat.Coat a large skillet with non-fat cooking spray and heat on medium high. Add chicken and cook on both sides 4-5 minutes until browned.

  • ½ tbsp. olive oil
  • ½ cup minced red onion
  • 1 tbsp. Truvia
  • 1 tbsp. finely chopped jalapeño pepper (leave the seeds in if you want it hot!)
  • 3 teaspoons cider vinegar
  • 2 teaspoons low-sodium soy sauce (author likes Kikkoman)
  • ½ tsp. salt
  • 3/4 tsp. ground allspice
  • 3/4 tsp. dried thyme
  • 3/4 tsp. freshly cracked black pepper
  • ½ tsp. cayenne
  • 4 boneless skinless chicken breasts (trimmed)
  • Fat-free cooking spray
